Initiation Tasting Workshop:

Date: Friday, June 28, 2019, afternoon 2 p.m. to 6 p.m.

Prerequisites: none

Audience: all olive oil enthusiasts who want to discover the basics of tasting.

Program:

- Get to know the different stages of development and the characteristics of the product: production, composition, nutritional aspect, reading a label, regulations, ...

- Discover the methodology of tasting virgin olive oils and its mechanisms.

- Develop and refine your sensory perceptions: recognize the different fruity notes, detect bitterness and pungency (spiciness). What is direct olfaction and retronasal olfaction?

- Acquire the vocabulary of tasting olive oils (Writing of the organoleptic profile of an olive oil)

Oils tasted: 10 oils from several producing countries

Number limited to a maximum of 12 participants

Initiation workshop price: ā‚¬80 incl. tax/person

Perfection Tasting Workshop:

Date: Saturday June 29, 2019, morning from 9 a.m. to 1 p.m.

Prerequisites: Having completed the previous ā€œinitiationā€ workshop or having good knowledge of olive oil tasting

Audience: Experienced amateurs, Professionals in the olive sector, catering trades or the food industry.

Program:

- Discover the official tasting methodology: tasting conditions for a test panel, training methods for tasters,

- Develop and refine your sensory perceptions: what are the faults of olive oils? What factors can influence the quality of extra virgin olive oil? Recognize the different commercial categories (lampante, virgin, extra virgin).

- Hedonistic tasting & competition tasting.

Oils tasted: 10 oils from several producing countries

Number limited to a maximum of 12 participants

Advanced workshop rate: ā‚¬80 including tax/person

Special rate to attend the two workshops: ā‚¬150 including tax/person
