In the village of Ticul, in southern YucatĆ”n, lies a hidden gem in the world of chocolate: KiāXocolatl, an artisanal chocolate maker born from a passion for origin cocoa and respect for Maya traditions. In 2021, this company gained international recognition by winning the gold medal for the best origin chocolate in the worldĀ at the prestigious āChocolates Processed at Originā International CompetitionĀ organized by the AVPAĀ in Paris.
This distinction, awarded after a rigorous evaluation by a panel of experts, recognizes not only the exceptional quality of KiāXocolatlāsĀ chocolates but also the commitment of a company that values 100% Mexican cocoa, locally grown in YucatĆ”n. By using artisanal techniques, local ingredients, and a sustainable vision, KiāXocolatlĀ succeeds in bringing out the complex aromas of criollo cocoa, the finest in the country, while preserving the authenticity of a product rooted in Maya history and culture.
To mark the significance of this recognition, AVPAĀ wanted to go beyond just awarding the prize: Paz Figares, the agency's commercial development manager, personally traveled to YucatĆ”n to meet with the founders and teams of KiāXocolatl. This symbolic visit reflects AVPA'sĀ commitment to highlighting exceptional cocoa producers and strengthening ties with those who embody sustainable, innovative agriculture deeply rooted in their local regions.
āThis on-the-ground meeting allows us to better understand the challenges faced by these artisans of taste and to highlight their expertise to the international public,ā emphasized Paz Figares.
With 600 hectaresĀ cultivated in the region, KiāXocolatlĀ produces nearly 200 tonsĀ of cocoa annually, guaranteeing fair conditions for producers while committing to preserving local biodiversity.
The story of KiāXocolatlĀ is also that of an audacious bet: to produce exceptional chocolate without adjusting recipes for the competition, simply sending the same bars to the contest that they offer to their customers. A sincere and authentic approach that won over the judges.
Through this recognition and visit, AVPAĀ reaffirms its commitment to promoting quality agriculture that respects origins, producers, and consumers. The example of KiāXocolatlĀ demonstrates that Mexico is not only the birthplace of cocoa but also an important player in the global chocolate scene today.
